Let’s explore the Mediterranean region and discover the tastes of Greek cuisine. With a significant influence from Turkish and Italian cuisine, Greek food is a focused around olive oil, vegetables, and herbs specific to the Mediterranean region. I picked the following dishes from the vast list of Greek specialties. You may be familiar with and fond of many of them, but feel free to do some research and find some interesting recipes to prepare and enjoy with the group.

Appetizers

Spanakopita - flaky filo dough triangles filled with a tasty spinach and feta cheese mixture;

Tiropitakia - filo dough triangles filled with cheese

Taramosalata - salty spread made of cured roe of cod or carp, great dip for pita bread

Salads

Greek Summer Salad - salad consisting of tomatoes, cucumber, feta cheese and olives

Lima Bean and Beet Salad with Smoked Herring - healthy and tasty salad with a touch of smoked fish

Main course

Lahanodolmathes (Cabbage Rolls) - wilted cabbage leaves stuffed with ground pork and rice

Moussaka - casserole made by layering eggplant with a spiced meat filling then topping it off with a creamy bechamel sauce and baking to golden perfection.

Dessert

Melomakarona (Spice Cookies) - Greek spice cookies that are often soaked in a honey-based syrup. With tastes of cinnamon and cloves, they are delicious at any time of year (also called Phoenikia or Finikia).

Milopita (Apple cake) - A moist and tender apple cake that is the perfect showcase for crisp and delicious apples.
