There is an old saying: "Buy wine with apples, sell wine with cheese."  This is because against a fatty cheese, wines taste crisper, more acidic, and faults can be hidden away.  Yet against apples, a wine must stand on its own feet, and faults are amplified.

Ever tried an amazing wine in a tasting room or in a restaurant, but
when you buy a bottle and have it at home it just doesn't seem to be quote the same? It is one of the most interesting elements of enjoying wine, learning how it is effected by the things around it - company, setting, attitude, and of course, food can all directly impact your actual enjoyment of a wine, and even affects how critics score wines. So this month we will take a look at food and wine pairings, some of the basic rules to live by (hint: red with red meat, white with chicken and fish isn't true any more!) and we'll try a few correct - and incorrect - pairings to see exactly how wines are affected. And then we'll end the night revealing the two foods that have been deemed impossible to pair, and that is sure to ruin literally any wine.
